Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 1 cup water
- 1 cup spinach, chopped
- 1 cup heavy cream
- 1 cup pasta shells
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté for about 3 minutes or until the onion is translucent.
- Add the carrots and celery and sauté for about 5 minutes or until they start to soften.
- Add the chicken and sauté for about 5 minutes or until it starts to brown.
- Add the chicken broth, water, spinach, heavy cream and pasta shells and bring to a boil.
- Reduce the heat to low and simmer for about 10-12 minutes or until the pasta is cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped parsley and serve hot.
