Grilled Chicken in Sun Dried Tomato Basil Vinaigrette
Are you tired of making the same old grilled chicken every time you fire up the grill? Well, here’s a recipe that will have your taste buds doing a happy dance!
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup of sun-dried tomatoes (chopped)
- 2 cloves of garlic (minced)
- 1/4 cup of olive oil
- 2 tablespoons of balsamic vinegar
- 1 tablespoon of honey
- 1/4 cup of fresh basil (chopped)
- Salt and pepper
Instructions:
- Preheat grill to medium-high heat.
- In a small bowl, whisk together sun-dried tomatoes, garlic, olive oil, balsamic vinegar, honey, fresh basil, salt, and pepper.
- Place chicken breasts in a large bowl and pour the marinade over them. Make sure each piece is coated evenly.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Remove chicken from marinade and place on preheated grill. Cook for 6-8 minutes on each side, or until chicken is cooked through and no longer pink.
- Serve hot and enjoy!

So, you’re not a fan of dry chicken, huh? Well, you’re in luck because I’ve found a fool-proof way to make your grilled chicken super soft and succulent.
Ingredients:

- 1/4 cup of extra-virgin olive oil
- 2 tablespoons of lemon juice
- 2 cloves of garlic (minced)
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of paprika
- 1/4 teaspoon of cayenne pepper
Instructions:
- Preheat grill to medium-high heat.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, black pepper, paprika, and cayenne pepper.
- Place chicken breasts in a large bowl and pour the marinade over them. Make sure each piece is coated evenly.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Remove chicken from marinade and place on preheated grill. Cook for 5-6 minutes on each side, or until chicken is cooked through and no longer pink.
- Remove from heat and let rest for a couple of minutes before slicing and serving.
