I’ve been experimenting with different diets lately, and I recently made the decision to transition into a vegan lifestyle. It’s a choice that has brought me so much fulfillment and joy, both ethically and health-wise. Plus, I’ve discovered some incredibly delicious and creative recipes along the way!

Why I Choose To Be Vegan

There are a lot of reasons why someone might choose to go vegan. For me, it comes down to a few key factors:

  • Animal welfare: I simply cannot justify supporting industries that exploit and harm animals, whether that be through farming, entertainment, or beauty products.
  • Environmental impact: Eating a plant-based diet has a significantly lower carbon footprint and requires less water and land than animal agriculture.
  • Personal health: A well-planned vegan diet can provide all of the necessary nutrients for a healthy lifestyle.

Of course, transitioning to a vegan lifestyle does come with its challenges. One of the biggest hurdles for me was learning how to cook meals that were satisfying, nutritious, and tasty. But I’ve found plenty of resources and inspiration online, including this amazing recipe for Vegan Butternut Squash Soup!

Vegan Butternut Squash Soup

Butternut Squash Soup

Ingredients:

  • 1 medium butternut squash, peeled and chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent and the garlic is fragrant.
  3. Add the chopped butternut squash and vegetable broth to the pot.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the squash is tender.
  5. Use an immersion blender (or transfer the mixture to a blender) to puree the soup until it is smooth and creamy.
  6. Add salt and pepper to taste. Serve hot and enjoy!

Another delicious vegan recipe that I recently discovered is this Vegan Pad Thai with Tofu. It’s packed with flavor and protein, and it’s so easy to make!

Vegan Pad Thai with Tofu

Vegan Pad Thai

Ingredients:

  • 8 oz. pad Thai noodles
  • 1 package firm tofu, drained and pressed
  • 1 red bell pepper, sliced
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • 1/4 cup chopped peanuts
  • 1/4 cup chopped cilantro
  • For the sauce:
    • 1/4 cup soy sauce
    • 2 tablespoons brown sugar
    • 2 tablespoons rice vinegar
    • 1 tablespoon lime juice
    • 1 clove garlic, minced
    • 1/2 teaspoon red pepper flakes

Instructions:

  1. Cook the pad Thai noodles according to the package instructions. Drain and set aside.
  2. Cut the tofu into bite-sized pieces and sauté in a pan with 1 tablespoon of the vegetable oil until browned on all sides. Set aside.
  3. In the same pan, sauté the sliced bell pepper and green onions until tender. Set aside.
  4. In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, lime juice, garlic, and red pepper flakes to make the sauce.
  5. Heat the remaining tablespoon of vegetable oil in the pan, then add the cooked noodles, tofu, bell pepper, and green onions.
  6. Pour the sauce over the mixture and stir until everything is well coated.
  7. Serve hot, garnished with chopped peanuts and cilantro.

These are just a few examples of the delicious and satisfying vegan meals that are out there. If you’re considering going vegan, I encourage you to give it a try! Not only will you be making a positive impact on the world around you, but you might just discover some new favorite foods along the way.
